Abstract

The article presents the results of studies to determine the organoleptic, microbiological and physico-chemical parameters of pig meat in echinococcosis and alveococcosis. When studying the quality and safety of meat samples by organoleptic, microbiological and physico-chemical parameters for echinococcosis and pig alviococosis, it was determined that meat obtained from invasive animals met the requirements of SanPiN 2.3.1078-01 "Hygienic requirements for food safety and nutritional value" ( approved on November 06.11.2001, 54354 as amended and supplemented), GOST R 2011-12.06.2011 “Meat and meat products. General requirements and methods of microbiological analysis ”(1983) and the“ Rules for veterinary inspection of slaughtered animals and veterinary and sanitary examination of meat and meat products ”(XNUMX), and the deviations identified were uncritical and meat is produced without restriction. However, in order to provide a full guarantee of the veterinary and sanitary well-being of meat obtained from slaughter of invasive animals, in our opinion, an additional study on organoleptic, microbiological and physico-chemical indicators should be provided.
