Abstract

The article presents the results of a study of carcasses of domestic and wild ducks in order to detect sarcocystosis. Merchandising, organoleptic, physicochemical, microbiological indicators of meat of sick and healthy domestic and wild ducks were determined. The studies were carried out in the spring and autumn seasons at the farms of six regions of Central Russia, on the territory of which there were large bodies of water (ponds, lakes or swamps). In places of shooting wild ducks, domestic ducks grown in a private compound were also examined. The intensity of lesions of wild ducks with sarcocystosis was high, in domestic ducks - medium. Sarcocysts in one wild duck were found in large numbers in the pectoral muscles and less in the neck muscles, in the other two (domestic and wild) affected ducks, sarcocysts were found in many skeletal muscles. The size of the sarcocyst was uneven, but not more than millet grain. In our opinion, in cases of intense muscle damage with sarcocystosis, the carcasses and organs of the bird should be sent for utilization or fed to the animals after stripping and boiling for at least 1 hour. With a weak lesion and the absence of dystrophic processes in the muscles of the carcass, their internal organs are cleaned and sent to the canning production. It is not allowed to feed raw poultry meat affected by sarcocystosis to dogs, cats and other carnivores.
