Abstract

The safety of milk by microbiological indicators is an important condition for acceptance at a milk processing enterprise. The high microbial contamination of milk and the increased content of somatic cells in it often causes a mismatch with the modern requirements of national and international regulatory documents. The development and implementation of measures aimed at improving the condition of the udder of cows, the creation of modern processing facilities are important tasks, the solution of which will improve the sanitary and hygienic conditions of milk production. Prevention of mastitis is one of the most effective ways to increase the safety and quality of cow's milk. It is known that the most affordable way to prevent mastitis is strict hygiene during milking. The article presents the results of research work obtained in a dairy farm. The use of modern domestic means of processing the udder before and after milking was studied. For this, two experimental and one control groups were created. In the summer and autumn periods, the udder of cows in the experimental groups was treated with special detergents and disinfectants. In the control group, processing of the udder by special means was not carried out. Hygiene of the udder was supported by washing the nipples with warm water, as is customary in the household. It was found that treatment of the udder of cows with disinfectants leads to a decrease in the number of mesophilic aerobic and facultative anaerobic microorganisms and somatic cells in cow's milk.
