Abstract

Recently, more and more people are paying attention to a healthy lifestyle, including nutrition, while giving preference to natural products. One such product is honey. The chemical composition of honey is very rich: it contains easily digestible carbohydrates, amino acids, enzymes, minerals, vitamins, organic acids, which determine its nutritional, dietary and therapeutic properties. In the article, the authors analyzed the state of honey production in the country, reflected the share of imports in the market and the share of exports in the volume of production, studied the main factors affecting the honey market. Based on the results of studies of honey from various regions of the Russian Federation and the requirements of international legislation regarding product safety, the authors developed proposals to increase the competitiveness of beekeeping products in both domestic and foreign markets.
