Abstract

The article presents the results of a retrospective analysis on monitoring the contamination of poultry products for 2015-2019. Statistically unreliable or significant differences between the average rates of contamination between years and months are shown. The months in which the level of infection of poultry products increased annually with a supernormal quantity of mesophilic aerobic and facultative anaerobic microorganisms (QMAFAnM), as well as Listeria, Salmonella. Monitoring data on microbial contamination of poultry products are compared with salmonellosis period in the population of poultry. The coincidence of the maximums of infection of poultry products and their disease indicates the need to strengthen measures for sanitation of food production throughout the technological chain.
