Abstract

The article presents the results of a comparative assessment and selection of effective methods for assessing microbiological contamination and the activity of disinfectants in the food production. At assessing the degree of microbiological decontamination in food production, the use of «Dip-slide», a polymer plate coated with the «Oxoid» medium, saves material costs and research time, as well as excludes subjective factors. The general regularities of the stages of formation of heterogeneous biofilms of microorganisms in the study of food raw materials, products, technological equipment and environmental objects have been revealed. At the first stage, the adhesion of vegetative forms of bacteria occurs, which have a shape and size typical of the species. Due to the coaggregation of cells, a monolayer of microorganisms was formed in the form of a diffuse layer. There were also identified secondary microcolonies associated with primary ones and separated by matrix voids, in the microcavities, the formation of cell strands in the form of beams was revealed. Dispersion of microcolonies was accompanied by the destruction of the extracellular matrix and the separation of cells capable of attaching to the surface and forming new microcolonies. Under the influence of various concentrations of chemotherapeutic and disinfecting drugs, the frequency of occurrence of clusters – the aggregation of microorganisms united by a layer of the extracellular matrix – significantly decreased.
