Abstract

The article presents the results of the veterinary and sanitary examination of the Pereslavl and Siberian vendace. A biological analysis was carried out with the measurement of body weight and body accumulations, as well as organoleptic, physico-chemical, parasitic and microbiological studies. Based on the results of the study, it was possible to assess the quality and safety of the Pereslavl and Siberian vendace caught and purchased in the city of Pereslavl.
