Abstract

The article presents the results of studies of qualitative indicators of milk: mass fraction of fat (MF), mass fraction of protein (MDB), mass fraction of lactose (MDL), mass fraction of dry skim milk residue (SOMO), urea and somatic cells. Research was carried out in 2017 on advanced pedigree farms of the Gryazovets district of the Vologda region (Plemzavod-collective farm named after the 50th anniversary of the USSR, SEC “Anokhinsky”, LLC “PZ Pokrovskoye”) taking into account the season of the year. Agricultural enterprises are in equal territorial conditions, according to the method of maintenance, and are engaged in the cultivation of black-motley cattle.
Milk sampling was carried out in accordance with the monthly schedule of control milking cows and tested on a Combi-Foss infrared spectrometer. The device of the company FOSS (Denmark), on which the analysis of the quality of milk was carried out, is a world leader in the production of analytical instruments. The main advantages of this milk analyzer include high measurement accuracy, obtaining several indicators simultaneously. For the analyzed period, 1133 samples were studied at the Plemzavod collective farm named after the 50th anniversary of the USSR, 514 samples were studied at the Anokhinsky SEC and 1068 samples were examined at the PZ Pokrovskoye LLC. According to the results of the study for 2017, all the analyzed breeding farms of the Gryazovets district of the Vologda region revealed high quality milk indicators that meet the requirements of GOST. In the autumn and summer periods of the year, the highest milk quality indicators are observed. The urea content in the test milk for most of the analyzed year has an optimal value (20–25 mg / 100 ml). The content of somatic cells complies with the Russian standard GOST R 52054-2003 “Raw cow's milk. Technical conditions. "
