Abstract

The article presents the results of studying the content of active substances in a number of acid disinfectants based on peracetic acid: peracetic acid, acetic acid, hydrogen peroxide, used directly on the chicken processing line of a large meat processing plant. Since some disinfectants had too strong a destructive effect on the parts of the chicken processing line, a comparison of the experimental results with the data of the manufacturer was carried out. Most of the products showed compliance with the content of active substances declared by the manufacturers.
