Abstract
Milk is an important research object for the fundamental science and the development of new
processing technologies. A large number of biologically active compounds of milk, with a more
detailed study, show their more and more important properties, including antioxidant ones. The
aim of the work was to determine the total amount of water-soluble antioxidants (using the amperometric
method) in the milk of Black-and-White cows depending on a single milk yield at the
beginning and middle of lactation.
As a result of the work done, data on antioxidant activity, biochemical composition and milk
yield were obtained for 32 samples of milk from black-and-white cows from the «Ladozhskoye»
breeding farm. Moderate negative correlation values (-3 and -0,380) were obtained between
the data of the total amount of water-soluble antioxidants and milk yield (morning and evening
milking) for group 0,436 (during lactation 3-121 days) in comparison with lower values of such correlations
for groups 150 and 1 (lactation periods 2-10 and 90-91 days, respectively). These data are
not only new, but extremely important for assessing the total antioxidant activity during certain
periods of lactation. Since the level of antioxidants significantly affects the shelf life, nutritional
value and many other parameters of milk, the authors propose to use the level of antioxidants as an
additional parameter in the overall assessment of milk quality.
The data obtained are of great importance in assessing the physiological and biochemical status,
including the state of the system of antioxidant defense of the cow's organism.
